Allium B Kitchen - Asparagus Frittata

The sun is still shining, so this is the perfect recipe for an easy supper in the garden after work
 or if your truly lucky a mid week picnic.

You will need 

6 large eggs
1 bunch of Asparagus
1 tbsp extra virgin olive oil 
1 knob of butter
Sea Salt and ground black pepper to season
Hot sauce such as Harissa, to serve (optional)

a 19 cm ovenproof frying pan


Preheat the oven to 180C / gas 4. 

Beat the eggs with a little sea salt and black pepper.

 Heat the oil and butter in a 19cm oven-proof frying pan over a medium heat 

and sauté the asparagus for 5 minutes. 

Add eggs, cook for 3 minutes 

then bake for 15–20 minutes until golden and fluffy.

Now serve hot or cold (with a drizzle of sauce if you fancy)

with a crisp green salad and a cold glass of Rose
