Allium B Kitchen: The joy of soup and being naughty

After a few too many mince pies & tasty treats over Christmas, we are trying to be good at 
Allium B.
The sleet and snow outside isn't helping, but we are convinced, our hearty bowls of soup, 
might be.
This week's favourite is Simple Parsnip & Apple (taken from Soups for All Seasons) with a few tweaks (the original recipe includes milk).

Ingrediants-
50g butter
5 parsnips, peeled and cut into chunks
1 large Bramley apple, peeled and cut into chunks
1 litre vegetable stock
Salt & pepper

This is one of the quickest soups ever.
Melt the butter in a pan, add the parsnips & apple and cook for 10 minutes.

 Add the stock and simmer for 20 minutes or until the parsnips are cooked.
Blend until smooth, season to taste and serve with fresh bread

The only problem is we like a coffee after lunch and a small treat

Truly delicious and we have convinced ourselves, they must be good for us too.
