Allium B Kitchen: Chicken Tacos

If you are after a quick, fresh and tasty dinner, these Chicken tacos could not be simpler. You just have to use your imagination and visualize you are actually sat by the beach on a balmy summers evening, cocktail in hand and listening to the waves lap against the sand, instead of turning the heating up and watching the rain drops against the window. A girl can wish for summer right?
This is the perfect dish to serve up at a summer gathering with friends, where everyone can tuck in themselves.
You will need:
4 Chicken Fillets
8 tortilla wraps (small ones)
2 large avocados
½ red onion
2 lime
2 handful of coriander
Watercress
10 cherry tomatoes
1 big pinch of rock salt
2 gloves of garlic
Crème frèche
2 tbsp. hot sauce
Olive oil

This recipe feeds 4 people (2 wraps each) you can easily multiply or halve to suit.

 Start with your chicken marinade.
1.       Use a pestle and mortar to crush up a handful of coriander, 2 cloves of garlic 1 lime and a pinch of rock salt. Keep crushing till it is all combined.
2.       Add your 2 tbsp oil, stir and pour over your chicken.

Now for your the guacamole
3.       Use a fork to loosely mash your avocado. You want it to be nice and chunky.
4.       Finely chop ½ a red onion, a handful of coriander and cherry tomatoes
5.       Mix it all together with the lime and salt

Now for your sauce
6.       Simply mix 8 tbsp of crème freche and the hot sauce together (add more if you prefer a kick)

Leave on the side and start on cooking the chicken
7.       Heat your frying pan, with a tablespoon of oil, and when it starts smoking turn it down to medium heat and add your chicken
8.       Keep tossing your chicken, so not to burn. Cooking time approx 10 8-10 minutes

You are now ready to serve. Simply pop your wraps in the microwave for 20 seconds or the oven on low for 3 minutes.

There is no set way to eat them, but I like to make a bed of watercress, add the guacamole with the chicken on top and drizzle on your sauce, wrap and EAT.
